Carrot Loaf Recipe

Ingredients:

Loaf
  • 2 cups wholemeal self-raising flour
  • 3/4 cup brown sugar
  • 2 tbsp flax meal
  • 1 tsp cinnamon
  • 1 tsp ginger
  • ½ cup chopped walnuts
  • 2 cups grated carrots
Frosting
  • 1 cup icing sugar
  • ½ cup sultanas or raisins
  • 300g grated carrots
  • ½ cup milk (any kind)
  • 3 tbsp extra virgin olive oil
  • 150g cream cheese

Method:

  1. Preheat oven to 180°C (356°F).
  2. Mix dry ingredients in a large bowl.
  3. In a separate bowl, mix wet ingredients.
  4. Combine both mixtures and pour into a greased, lined cake tin.
  5. Bake for 30 minutes or until a skewer comes out clean.
  6. Cool completely before frosting.
  7. For frosting, beat cream cheese until smooth, add icing sugar gradually, and adjust with milk if needed.
