Ingredients

  • 4 cups desiccated coconut (unsweetened)
  • 1 cup full-fat coconut milk
  • 3/4 cup melted coconut oil
  • 3/4 cup pure maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup crushed freeze-dried raspberries or strawberries
  • Pinch of salt

Instructions

  1. Blend coconut milk, desiccated coconut, maple syrup, vanilla, and salt until smooth.
  2. Stir in freeze-dried berries.
  3. Pour mixture into popsicle moulds, leaving space at the top.
  4. Insert sticks and freeze for at least 4 hours or until solid.
  5. To serve, run moulds under warm water briefly to release popsicles.
