Ingredients

  • 1 cup cooked quinoa
  • 1 cup cooked chickpeas
  • 1 cup roasted sweet potato cubes
  • ½ avocado, sliced
  • 1 cup shredded red cabbage
  • ½ cup grated carrots
  • 1 cup baby spinach
  • ½ cucumber, sliced
  • 2 tbsp tahini
  • 1 tbsp lemon juice
  • Olive oil, for roasting
  • Salt and pepper, to taste
  • Sesame seeds & fresh cilantro (for garnish)

How to Prepare

  1. Preheat oven to 200°C (400°F). Toss sweet potato cubes in olive oil, salt, and pepper. Roast for 20–25 mins until tender.
  2. Prepare all ingredients: cook quinoa and chickpeas, shred cabbage, grate carrots, slice cucumber and avocado.
  3. Layer baby spinach in a bowl. Arrange quinoa, chickpeas, sweet potato, cabbage, carrots, cucumber, and avocado on top.
  4. Whisk tahini with lemon juice, adding water to reach desired consistency. Drizzle over bowl.
  5. Garnish with sesame seeds and cilantro. Serve immediately.
