Ingredients
- 1 cup cooked quinoa
- 1 cup cooked chickpeas
- 1 cup roasted sweet potato cubes
- ½ avocado, sliced
- 1 cup shredded red cabbage
- ½ cup grated carrots
- 1 cup baby spinach
- ½ cucumber, sliced
- 2 tbsp tahini
- 1 tbsp lemon juice
- Olive oil, for roasting
- Salt and pepper, to taste
- Sesame seeds & fresh cilantro (for garnish)
How to Prepare
- Preheat oven to 200°C (400°F). Toss sweet potato cubes in olive oil, salt, and pepper. Roast for 20–25 mins until tender.
- Prepare all ingredients: cook quinoa and chickpeas, shred cabbage, grate carrots, slice cucumber and avocado.
- Layer baby spinach in a bowl. Arrange quinoa, chickpeas, sweet potato, cabbage, carrots, cucumber, and avocado on top.
- Whisk tahini with lemon juice, adding water to reach desired consistency. Drizzle over bowl.
- Garnish with sesame seeds and cilantro. Serve immediately.
