Ingredients
- 1 boneless chicken breast (or tofu for vegetarian)
- 2 carrots, peeled and sliced
- 1 sweet potato, peeled and cubed
- 2 celery stalks, sliced
- 4 cups low-sodium chicken or vegetable broth
- 1 cup spinach, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
How to Prepare
- Poach the chicken breast in boiling water until cooked, then shred. If using tofu, lightly pan-fry until golden.
- In a large pot, heat olive oil. Add onion and garlic; sauté until softened.
- Add carrots, sweet potato, and celery. Cook for a few minutes before pouring in the broth.
- Bring to a boil, reduce heat, and simmer until vegetables are tender.
- Add shredded chicken or tofu and chopped spinach. Season with thyme, salt, and pepper.
- Simmer until spinach wilts. Garnish with fresh parsley and serve warm.
