Cleansing Vegetable Soup

 

Ingredients:

For the Soup:

  1. 1 tablespoon extra virgin olive oil
  2. 1 medium onion, diced
  3. 2 garlic cloves, minced
  4. 2 carrots, diced
  5. 2 celery stalks, diced
  6. 1 zucchini, chopped
  7. 1 cup green beans, trimmed and cut into 1-inch pieces
  8. 1 cup kale, ribs removed and chopped
  9. 1 cup spinach leaves
  10. 1 can (14.5 oz) diced tomatoes
  11. 4 cups low-sodium vegetable broth
  12. 1 bay leaf
  13. Salt and pepper, to taste
  14. Juice of 1 lemon
  15. Fresh parsley, chopped (for garnish)

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, and sauté until softened, about 3–4 minutes.

  2. Add the carrots and celery, cooking for an additional 5 minutes until they start to soften.

  3. Stir in the zucchini, green beans, and diced tomatoes. Add the vegetable broth and bay leaf.

  4. Bring the soup to a boil, then reduce the heat and simmer for 20 minutes or until the vegetables are tender.

  5. Add the kale and spinach; simmer for 5 more minutes until the greens are wilted.

  6. Season with salt, pepper, and lemon juice. Remove the bay leaf before serving.

  7. Garnish with fresh parsley, and enjoy your warm, cleansing bowl of soup!
