Ingredients:
For the Soup:
- 1 tablespoon extra virgin olive oil
- 1 medium onion, diced
- 2 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 zucchini, chopped
- 1 cup green beans, trimmed and cut into 1-inch pieces
- 1 cup kale, ribs removed and chopped
- 1 cup spinach leaves
- 1 can (14.5 oz) diced tomatoes
- 4 cups low-sodium vegetable broth
- 1 bay leaf
- Salt and pepper, to taste
- Juice of 1 lemon
- Fresh parsley, chopped (for garnish)
Instructions:

Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, and sauté until softened, about 3–4 minutes.

Add the carrots and celery, cooking for an additional 5 minutes until they start to soften.

Stir in the zucchini, green beans, and diced tomatoes. Add the vegetable broth and bay leaf.

Bring the soup to a boil, then reduce the heat and simmer for 20 minutes or until the vegetables are tender.

Add the kale and spinach; simmer for 5 more minutes until the greens are wilted.

Season with salt, pepper, and lemon juice. Remove the bay leaf before serving.
