Ingredients:

  • 2 large heads broccoli, chopped
  • 1 cup almonds, blanched and slivered
  • 3 garlic cloves, minced
  • 1 onion, finely chopped
  • 4 cups vegetable broth
  • 1 cup almond milk
  • 2 tbsp nutritional yeast (optional)
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tbsp lemon juice
  • Fresh parsley, for garnish

Method:

  1. Sauté onion and garlic in olive oil until translucent.
  2. Add broccoli and cook for 3–4 minutes.
  3. Pour in broth and almond milk. Bring to a simmer.
  4. Blend almonds separately into a fine meal, then add to pot.
  5. Add nutritional yeast, salt, and pepper. Simmer 15–20 minutes.
