Ingredients
- 2 boneless, skinless chicken breasts
- 2 cups cooked quinoa
- 1 cup chopped spinach
- 1 cup cherry tomatoes, halved
- ½ cucumber, sliced
- 1 red bell pepper, diced
- 1 avocado, sliced
- 2 tbsp lemon juice
- Olive oil, for grilling
- Salt and pepper, to taste
- ½ tsp paprika
- ½ tsp garlic powder
- Fresh parsley, chopped (for garnish)
How to Prepare
- Season chicken breasts with salt, pepper, paprika, and garlic powder.
- Grill over medium-high heat with olive oil until golden and cooked through, 5–7 mins each side. Rest and slice.
- Arrange cooked quinoa in serving bowls as the base.
- Top with spinach, tomatoes, cucumber, red pepper, and avocado.
- Place sliced grilled chicken on top. Drizzle with lemon juice and garnish with parsley.
