Mystical Mushroom Quinoa Risotto Recipe
Ingredients:
- 1 cup quinoa
- 2 cups vegetable broth
- 2 tablespoons olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 300 grams mixed mushrooms, sliced (shiitake, button, portobello, etc.)
- 1 red bell pepper, sliced
- 1 cup snap peas
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste

Method:
- Rinse quinoa thoroughly. Cook with vegetable broth in a saucepan (simmer 15 min or until absorbed). Fluff and set aside.
