Ingredients

For the Grilled Sea Bass:

  • 2 whole sea bass (about 1 pound each), gutted and scaled
  • 2 tbsp extra virgin olive oil
  • 2 garlic cloves, minced
  • 1 lemon, thinly sliced
  • Fresh parsley, dill, or thyme
  • Salt & pepper to taste

For the Roasted Potatoes:

  • 1.5 pounds small potatoes, halved
  • 3 tbsp extra virgin olive oil
  • 4 garlic cloves, minced
  • Zest of 1 lemon + juice of 1/2 lemon
  • 1 tsp dried oregano
  • Salt & pepper to taste

How to Prepare

  1. Preheat the grill to medium-high. Rinse and pat dry the fish. Score both sides. Rub with olive oil, garlic, salt, pepper, and stuff with lemon slices and herbs.
  2. Grill fish for 7–9 minutes on each side until skin is crispy and flesh is flaky.
  3. Preheat oven to 400°F (200°C). Toss potatoes with all ingredients and spread on baking sheet.
  4. Roast potatoes for 40–45 minutes until golden and crispy.
  5. Serve fish alongside roasted potatoes, garnish with fresh herbs or lemon wedges.
