  • 3 tbsp miso paste (white or yellow)
  • 1 litre filtered water
  • 1 tsp sesame oil
  • 1 block soft tofu, cubed
  • 2 cups chopped bok choy
  • 1 cup shiitake mushrooms, sliced
  • 1 small sheet nori or wakame seaweed, torn
  • 1 tsp fresh grated ginger
  • 1 clove garlic, minced
  • 2 spring onions, finely sliced
  • 1 tsp tamari or low-sodium soy sauce (optional)

How to Prepare

  1. In a medium pot, heat sesame oil and sauté garlic and ginger for 1 minute.
  2. Add mushrooms and cook until slightly softened.
  3. Pour in water and bring to a gentle simmer.
  4. Add bok choy, tofu, and seaweed. Simmer for 5–7 minutes until everything is tender.
  5. Turn off heat. In a separate bowl, whisk miso paste with some hot broth, then stir it back into the soup (do not boil).
