Ingredients
- 3 tbsp miso paste (white or yellow)
- 1 litre filtered water
- 1 tsp sesame oil
- 1 block soft tofu, cubed
- 2 cups chopped bok choy
- 1 cup shiitake mushrooms, sliced
- 1 small sheet nori or wakame seaweed, torn
- 1 tsp fresh grated ginger
- 1 clove garlic, minced
- 2 spring onions, finely sliced
- 1 tsp tamari or low-sodium soy sauce (optional)
How to Prepare
- In a medium pot, heat sesame oil and sauté garlic and ginger for 1 minute.
- Add mushrooms and cook until slightly softened.
- Pour in water and bring to a gentle simmer.
- Add bok choy, tofu, and seaweed. Simmer for 5–7 minutes until everything is tender.
- Turn off heat. In a separate bowl, whisk miso paste with some hot broth, then stir it back into the soup (do not boil).
- Season with tamari if needed. Garnish with spring onions and serve warm.
