Cleansing Vegetable Soup Recipe

Ingredients:

  • 1 tablespoon extra virgin olive oil
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, chopped
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 cup kale, ribs removed and chopped
  • 1 cup spinach leaves
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 1 bay leaf
  • Salt and pepper, to taste
  • Juice of 1 lemon
  • Fresh parsley, chopped (for garnish)

Method:

  1. Heat olive oil in a large pot over medium heat. Sauté onion and garlic until softened (3–4 minutes).
  2. Add carrots and celery. Cook 5 more minutes until slightly tender.
  3. Stir in zucchini, green beans, diced tomatoes, broth, and bay leaf. Bring to a boil.
  4. Reduce heat and simmer 20 minutes until veggies are soft.
  5. Add kale and spinach. Simmer 5 minutes more until wilted.
  6. Season with salt, pepper, and lemon juice. Remove bay leaf before serving.
  7. Garnish with parsley and enjoy the reset!
