Cleansing Vegetable Soup Recipe
Ingredients:
- 1 tablespoon extra virgin olive oil
- 1 medium onion, diced
- 2 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 zucchini, chopped
- 1 cup green beans, trimmed and cut into 1-inch pieces
- 1 cup kale, ribs removed and chopped
- 1 cup spinach leaves
- 1 can (14.5 oz) diced tomatoes
- 4 cups low-sodium vegetable broth
- 1 bay leaf
- Salt and pepper, to taste
- Juice of 1 lemon
- Fresh parsley, chopped (for garnish)
Method:
- Heat olive oil in a large pot over medium heat. Sauté onion and garlic until softened (3–4 minutes).
- Add carrots and celery. Cook 5 more minutes until slightly tender.
- Stir in zucchini, green beans, diced tomatoes, broth, and bay leaf. Bring to a boil.
- Reduce heat and simmer 20 minutes until veggies are soft.
- Add kale and spinach. Simmer 5 minutes more until wilted.
- Season with salt, pepper, and lemon juice. Remove bay leaf before serving.
- Garnish with parsley and enjoy the reset!
